Crispy Pork Sandwiches

Pork cutlets are pan-fried until golden, then stuffed in a chewy hero roll and topped with fresh, bright veggies and herbs for these Vietnamese-style sandwiches.

2 tbsp. rice vinegar
1 tsp. brown sugar
5 tbsp. olive oil
thin pork cutlets
panko bread crumbs
1/2 c. fresh cilantro
small hero rolls
- In a medium bowl, whisk together the vinegar, sugar, 1 tablespoon oil, and 1/4 teaspoon each salt and pepper. Thinly slice scallions lengthwise and add them to bowl along with radishes and jalapeño. Let sit, tossing occasionally, for at least 10 minutes.
- Meanwhile, season pork with 1/2 teaspoon salt and 1/4 teaspoon pepper. Coat cutlets in panko, pressing gently to help it adhere.
- Heat 2 tablespoon oil in a large skillet over medium-high heat. Add half cutlets and cook until golden brown and cooked through, 2 to 3 minutes per side; transfer to plate and wipe out skillet. Repeat with remaining 2 tablespoon oil and cutlets.
- Add cilantro to radish mixture and toss to combine. Form sandwiches with rolls, cutlets and radish mixture.
